Black Pepper & Beetroot Soup

A really simple earthy Beetroot Soup, perfect with seeded bread.

Ingredients:

  • 4 medium Beetroots (pre-cooked)
  • 4 Garlic Cloves
  • 1 Leek
  • Zest & Juice of lemon
  • Salt & Black Pepper
  • 1 tbsp olive oil

 

Method:

  1.  Dice the garlic and leek and brown in a pan with the olive oil on a medium heat.
  2. Place in the blender with the beetroot and the zest and juice of the a lemon.
  3. Place back in the pan to heat up and season with salt and pepper to taste.
  4. Pour in to a bowl and serve with a sprig of mint.
