Spicy Maple Ribs & Homemade Coleslaw

This an easy recipe for sticky maple ribs served with homemade mayonnaise coleslaw. Perfect for the summer months.

Ingredients for ribs marinade:

  • Spare ribs
  • 100ml Maple Syrup
  • 2 Garlic Cloves
  • 1 tbsp Tomato Paste
  • 1 Red Chilli
  • 1 Lemon

Ingredients for Coleslaw:

  • 1/2 White Cabbage
  • 1/2 Red Cabbage
  • 2 Carrots
  • 1 red Onion
  • 1 Egg Yolk
  • 1 tsp Dijion Mustard
  • 250ml Rapeseed Oil
  • 1tsp White Wine Vinegar
  • 1/2 Lemon Juice
  • Sea Salt

Method:

  1. Combined all the marinade ingredient in a bowl with the ribs and mix well. Leave in the fridge for 2 hours but preferably overnight.
  2. Shred the white and red cabbage, carrots and onion in a food processor and set aside.
  3. In a sperate bowl, whip the egg yolk, dijon mustard and white wine vinegar in a bowl
  4. Add in the rapeseed oil slowly and keep mixing as you are pouring it in.
  5. once fully mixed season with the lemon juice and salt to taste
  6. Mix the shredded vegatables with the mayonnaise.
  7. Place the ribs on a baking tray and bake for 20-30 minutes at 200°C preheated oven.
  8. Serve and Enjoy!!
