Chocolate Chip Chickpea blondies

These are biscotti blondies are gooey and moist in the middle and have a perfect brownie crust. The use of chickpea instead of flour and eggs also makes them vegan!

Ingredients:

  • 400g tin of chickpeas
  • 100g biscotti spread
  • 40g rolled oats
  • 200g caster sugar
  • 1 tsp baking powder
  • 60g agave syrup
  • 100g Dark chocolate chips

Methods:

  1. Place the chickpea, biscotti spread, rolled oats, caster sugar and agave syrup in a food processor and blend until smooth.
  2. Pour the mixture in to a 7inch square baking tin and sprinkle the chocolate chips over the top and place in the oven to bake for 25 min at 180°C.
  3. Serve & Enjoy
