Caribbean Chicken Traybake

A Caribbean seasoning and mango marinaded chicken thighs serve with basmati rice and beans.


Traybake ingredients:

  • 8 chicken thighs
  • 8 tsp Caribbean seasoning
  • 350g mango pulp
  • 8 shallots
  • 250g basmati rice, cooked
  • 400g black beans
  • 4 spring onions

Serves 4

Caribbean Seasoning:

  • 2 tbsp soft brown sugar
  • 3 tbsp paprika
  • 1 tbsp cinnamon
  • 1 tbsp course salt
  • 2 tsp ground ginger
  • 1 tsp allspice
  • 2 tsp cayenne pepper
  • 1 tsp ground nutmeg
  • 1 tsp ground black pepper


Caribbean Seasoning:

  1. Mix all of the spices and sugar in a bowl until it is well combined. This will make enough to do this recipe 2-3 times.


  1. Preheat the oven to 200ºC
  2. In a large bowl mix together the mango pulp and the Caribbean seasoning.
  3. Place the chicken thighs in the marinade and allow to marinade for 30 minutes.
  4. Meanwhile, quarter the shallots and then pour the marinaded chicken on top and place in the oven 30 minutes.
  5. After 30 minutes of cooking, check the chicken is cooked and then pour in the cooked basmati rice and the black beans.
  6. Place back in the oven for another 5 minutes.
  7. Slice the spring onions and serve sprinkled over the top.
