A really simple earthy Beetroot Soup, perfect with seeded bread.
- 4 medium Beetroots (pre-cooked)
- 4 Garlic Cloves
- 1 Leek
- Zest & Juice of lemon
- Salt & Black Pepper
- 1 tbsp olive oil
- Dice the garlic and leek and brown in a pan with the olive oil on a medium heat.
- Place in the blender with the beetroot and the zest and juice of the a lemon.
- Place back in the pan to heat up and season with salt and pepper to taste.
- Pour in to a bowl and serve with a sprig of mint.
