chopped into chunks
Instructions
Preheat the oven to 180°C, and line 2 baking trays with silicon mats
Cream together the softened butter and both sugars with a wooden spoon, until pale and creamy.
Add in the egg and vanilla extract and beat until combined.
Sift in the salt and self-raising flour and mix until it makes a cookie dough texture.
Add in the chocolate and crystalised ginger and incorporate until it is evenly distrubuted.
Scoop ping pong balls size piece onto the silicon mat leaving room for them to spread. Bake in the oven for 12 minutes.
Once baked, allow to cool on the tray before removing to cool fully on a wired rack.
