Strawberries & Baileys Trifle
A delicious trifle with Madeira cake, strawberry jam, fresh strawberries and a Baileys whipped cream.

- 300 ml Double cream
- 60 ml Baileys
- 200 g Madeira cake
- 300 g Strawberries
- 20 g Caster sugar
Start by making the jam by adding 120g of strawberries (quartered) with the caster sugar and 2 tbsp of water in a pan and cook on a low heat for 20-30 minutes, stiring occasionally. Remove from the heat, let the mixture cool fully and thicken.
In a bowl whisk together the Baileys and double cream until it forms soft peaks.
Slice the Madeira cake into cubes.
Fill the glasses up with layers of baileys whipped cream, maderia cake, strawberry jam and fresh strawberries which have been quartered.
Chill for 30 minutes in the fridge before serving.
