Easiest Banana Loaf

A super simple banana loaf recipe perfect for those over ripe bananas.

Equipment

  • Loaf Tin
  • Blender (optional)

Ingredients
  

  • 75 g Margarine
  • 100 g Caster sugar
  • 1 Egg
  • 2 Medium bananas
  • 150 g Plain flour
  • 1 tsp baking powder
  • ½ tsp salt

Instructions
 

  • Preheat the oven to 160°C fan/ 180°C. Line a loaf tin with parchment paper.
  • Cream together the margarine and sugar until fluffy and pale.
  • In a blender, pulse together the egg and bananas until if forms a smooth liquid.
  • Add the banana mixture to the butter mixture and combine together.
  • Mix in the rest of the ingredients.
  • Pour into the loaf tin, bake in the oven for 1 hour or until golden and a skewer comes out clean.
  • Leave to cool in the tin before moving to a wired rack to cool fully.

Notes

Add in 100g chocolate chips or chocolate chunks tossed in the flour first, to make chocolate banana bread, this also means the chocolate will be evenly distributed throughout the loaf.
