Vegan Tiramisu
A vegan twist on the Italian tiramisu classic. This tiramisu is made up of layers of coffee cake, coffee chocolate ganache and topped with whipped vegan cream.
Ingredients
Sponge
- 120 g Plain flour
- 60 g Margarine
- 100 g Caster sugar
- 50 ml Aquafaba (chickpea water)
- ¼ tsp Xanthan gum
- 40 ml Soya milk
- 1 tsp Vanilla bean paste
- 1 tsp Cornflour
- 1 tsp Baking powder
- ½ tsp Salt
- 60 ml Strong coffee
Cream Layer
- 100 ml Aquafaba
- ¼ tsp Xanthan gum
- 1 tsp Vanilla bean paste
- 2 tbsp Icing sugar
- Cocoa powder for dusting
Chocolate Coffee Layer
- 100 g Dark chocolate
- 100 ml Almond milk
- 75 g Strong coffee
