Vegan Onion Bhaji Burger
A crispy layered onion bhaji burger with alternating layers of a creamy mint raita and a sweet and sticky mango chutney, served in a vegan brioche bun.
Ingredients
- 2 Red onions
- 1 tbsp Garam masala
- 1 tsp Ground Coriander
- Thumb of ginger
- 3 tbsp Plain flour
- 1 tsp baking powder
- 75 ml Water
- Vegetable oil for frying
Raita
- 150 g Cucumber
- 100 g Coconut yogurt
- Handful of coriander
- Handful of mint leaves
- ½ tsp Sea salt
- ½ tsp Black pepper
Accompaniments
- 2 Vegan brioche buns
- 2-3 tbsp Mango chutney
Instructions
- Slice the onions finely and mix in a large bowl with the garam masala, ground coriander, plain flour, grated ginger and baking powder.
- Add the water to the mix until it forms a thick onion batter.
- To make the raita, grate the cucumber and squeeze out any excess water.
- In a bowl mix the coconut yogurt and the finely sliced fresh coriander and mint leaves. Season with the salt & pepper.
- Pat the onion batter into flat burgers and fry on each side for a couple of minutes until golden brown.
- Assemble the burger by dolloping alternate layers of mango chutney and raita with the onion bhaji patties in the vegan brioche bun.
